This is our Halloween take on the Dark and Stormy – a classic rum and ginger beer drink. Floating in the glasses are round ice cubes made with Lychee Syrup and Lychees stuffed with Brandied Cherries, which have an uncanny resemblance to eyeballs.
One 20-Ounce / 567g Can Lychees in heavy Syrup
1/4 Cup Thinly Sliced Peeled Fresh Ginger
16 Brandied Cherries
1/4 Cup Superfine Sugar
1/2 Cup Fresh Lime Juice
12 Ounces / 355 ml Dark Rum
Three x 330 ml Non Blonde Ginger Lager
Ice Cubes
In a small saucepan, bring the Lychee syrup and Ginger slices to a boil.
Remove from the heat, cover and let steep for 30 minutes.
Meanwhile, stuff the 16 Lychees with the Brandied Cherries.
Place each stuffed Lychee in the cup of a round mould ice tray i.e. so when frozen the ice cubes are round and the lychee is encased in the round ice cube.
Strain the ginger from the Lychee-ginger syrup and pour it over the Lychees in the ice trays. Freeze until firm, at least 4 hours.
Meanwhile, in a pitcher, stir the sugar into the lime juice until dissolved.
Add the rum and refrigerate until chilled, about 1 hour.
Un-mould the lychee ice cubes into 8 glasses.
Divide the lime-rum mixture between the 8 glasses
Top the glasses up with the Ginger Lager.
Stir gently and serve immediately

The Lychee ice cubes can be frozen for up to 1 week prior to you needing them.
